Under the expertise of Master Sotolero Gerardo Ruelas, the sotol plants undergo a traditional cooking process in an outdoor conical oven, followed by meticulous hand milling using axes. The resulting fibres are naturally fermented with indigenous wild yeasts in spacious 1,000-liter pine vats before undergoing a meticulous double distillation in copper alembic stills.
The Wheeleri variant offers a harmonious blend of smoky herbs and fruit notes, characterized by a more herbal-dominated aroma with subtle hints of smoke. On the palate, the herbal notes take center stage, complemented by delicate undertones of pineapple.
