Lindores Abbey Distillery, located in Fife, Scotland, stands on the historic grounds where the first recorded distillation of Scotch whisky took place in 1494. After centuries of dormancy, the distillery was revived in 2017, blending ancient traditions with modern techniques. This distillery has one of the longest fermentation periods in the industry (117 hours!) and distinctive 'sister' spirit stills named 'Poppy' and 'Gee'.
The MCDXCIV (1494) expression is matured in a combination of ex-bourbon barrels, STR wine barriques, and sherry butts, resulting in a harmonious and complex profile. On the nose, expect elegant notes of mellow vanilla, caramel, orchard fruits, and sweet pear drops, reminiscent of toffee apples. The palate offers a smooth, creamy texture with flavours of dried fruits, citrus touches, and a hint of spice, leading to a medium-length, delicate but lingering finish.
