North Star Spirits is a Glasgow-based independent bottler renowned for its thoughtful approach to whisky. With a focus on single cask releases and full-flavoured expressions, they bottle each whisky at natural cask strength with no chill filtration or added colouring. This 11-year-old GlenAllachie is a brilliant example of the distillery’s rich, modern house style. Built in 1967 at the foot of Ben Rinnes, Glenallachie has flourished under the independent ownership of Billy Walker, in recent years - producing a heavier, more full-bodied spirit ideal for sherry cask maturation. Distilled in July 2012 and matured in a single Oloroso sherry butt, this bottling bursts with notes of crème brûlée, stewed stone fruits, buttery toffee, and warming oak spice.
